The island of Mallorca in the Balearic Islands value the prickly pear [Opuntia] to this day as ornamental plants and residents planted hedges of it round their properties to keep out unwanted intruders [both human and animal] with their spines.
In older times, cochineal insects were bred on the prickly pear stems because their dried larvae provided carmine coloured dye for cosmetics and drinks. Right up to the 19th century, Mexico exported many tonnes of the dye to Europe until large areas of land were planted with the prickly pear in the Canary Islands and the breeding of cochineal insects became one of the Canary Islands' main sources of income. It was only towards the end of the 19th century when artificial dyes were developed, that the market collapsed. On Mallorca the breeding was never taken too seriously due to the competition from the Canaries.
Two kinds of prickly pear are known - Opuntia ficus barbarica [with its pale, short spines], and Opuntia dilleni [which is recognisable from its spines which are up to 3 inches long and lemon coloured flowers].
If the prickly pear is eaten raw, the seeds are also edible. Sometimes, the fruits are picked unripe and kept to eat during the Christmas festivities. Picking of the fruit is carried out with a special pair of tongs made of wood. The fruit is held and twisted until it breaks off the stem.
To get to the juicy, fig-like flesh of the fruit, the skin is removed [very carefully as it contains hundreds of tiny prickles!] The safest thing is to buy already prepared fruits for sale in summer in the market or beside the road and eat them on the spot.
Recipe using the prickly pear
Sorbet de figues de Moro [prickly pear sorbet]
Ingredients:
500g peeled prickly pears
30g of sugar
3-4 teaspoons of lemon juice
cava wine
Puree all the ingredients together and sieve. Freeze in an ice-cream machine or freezer cabinet. Take out 15 minutes before serving so that the sorbet softens a little.
